I've always understood Soviet Conventional Doctrine in the event of War with the west constitutes a massive armored/motor rifle invasion of Europe via the Fulda Gap. The aim would be to take Germany, and force the European leadership to sign peace before the use of nuclear weapons occurred. How much of that is true?

There were a number of different plans.
Soviet military doctrine rested in the idea that if war was inevitable, it should be fought on foreign ground, and by attacking as rapidly and aggressively as possible. If a nuclear engagement seemed inevitable, as far as I know, the intention was to hit them with everything there was, since there may not be a second chance. Soviet America is Free America!
